Regardless of the recipe you are preparing, it is important to pay attention when choosing pineapple to avoid those that are not yet ripe and therefore very acidic. A very old trick, but one that helps a lot when choosing is to pull one of the crown's leaves and see if it loosens easily. If so, it is a sign that the pineapple is ready for consumption. Another trick is to smell the base of pineapple, since the more mature have a sweeter aroma.
