Soy protein is obtained from defatted soy grain through a process that combines high temperature and pressure. According to the conclusion of some studies already carried out, healthy effects on the body occur thanks to substances such as saponin, which acts on the maintenance of the immune system and reduces the absorption of cholesterol in the intestine; phytosterol, which lowers cholesterol levels; and isoflavones, which have antioxidant effects and estrogenic activity, being a beneficial phytoestrogen to combat menopausal symptoms, premature aging and excess abdominal fat.

Soy Stroganoff

Pasta Ingredients


  • 500g of peeled and cooked manioc;
  • 1/2 can of light cream;
  • 1/2 cup of soy protein tea;
  • Salt to taste.

Stuffing Ingredients

  • 1 grated carrot;
  • 2 tbsp olive oil;
  • Green spices to taste (parsley, cilantro, basil, thyme);
  • White pepper to taste;
  • Salt to taste;
  • 100 g buffalo mozzarella.

Method of preparation

  1. Squeeze the manioc, add the cream and soy protein, which should be hydrated and prepared according to the manufacturer's instructions, and mix well until it forms a puree. Add salt and set aside;
  2. Sauté the carrot with the green spices in a pan with olive oil. Add salt and pepper. Let the broth dry well and let cool;
  3. Line an ovenproof dish with mashed manioc, sour cream and soy protein. Carefully place the carrot mixture with the green spices on the mashed layer. Cover everything with buffalo mozzarella and bake for browning.

Soy Protein Nut Pie

Pasta Ingredients


  • 4 eggs;
  • 5 tablespoons breadcrumbs;
  • 3 tablespoons ground walnuts;
  • 3 tbsp textured dark soy protein;
  • 1 teaspoon vanilla essence;
  • 1 tablespoon of sweetener for oven and stove;
  • 1 tablespoon baking powder;
  • 1 tablespoon vegetable oil to grease the pan.

Stuffing Ingredients

  • 1 packet of vanilla diet pudding prepared as per manufacturer's instruction.

Syrup Ingredients

  • 100 ml of filtered or mineral water;
  • 1 tablespoon of sweetener for oven and stove;
  • 1 teaspoon vanilla essence.

Topping Ingredients

  • 2 tablespoons ground walnuts;
  • 2 tablespoons unsweetened grated coconut;
  • 2 tbsp dark soy protein.

Method of preparation

  1. Beat the egg whites and add the egg yolks one by one;
  2. Turn off the mixer and add vanilla, breadcrumbs, walnuts, soy protein, sweetener and lastly yeast;
  3. Grease the pan with vegetable oil sprinkle breadcrumbs;
  4. Bake in preheated oven at 180 degrees for 25 minutes;
  5. Mix the syrup ingredients and cook until boiling;
  6. Break the cake in half and wet with the syrup after cold;
  7. Fill with the diet pudding, prepared according to the manufacturer's instructions, and cover the pie with this pudding;
  8. Stir in walnuts, grated coconut and soy protein and garnish the pie;
  9. Refrigerate for 4 hours before serving.
