Know the differences between yogurt, fermented milk and dairy drink

You may have already gone to the grocery store, and when faced with a wide variety of yogurts, you were unsure which one to take home. But were all those refrigerator products really yogurt? Did you pay attention to the labels?

By the way, do you know what are the differences between yogurt, milk drink and fermented milk? This is a subject that still generates doubts in many people. Although the names are completely different, the differences, especially in the case of dairy drink and yogurt, are not so obvious, as the packaging is often similar and the ingredients are virtually the same.

Below, Ina Carolina Menezes da Cruz, nutritionist, Nyoá Stetic Institute consultant, and food safety expert, talks about differences between the three types of products.

1. Milk drink

Ina explains that milk drink is a food made up of 51% whey and whey, which is made from fresh whey cheese, added to sugar and stabilizer. The mixture is heated and added to whole milk; heated again and cooled to fermentation temperature. Yeast is added until a curd is formed and dye and flavor or fruit pulp prepared ?, he says.

The nutritionist points out that this type of product should always be kept refrigerated between 5 ° C to 10 ° C. "The maximum validity is 30 days," he says.

• This type of drink has a significant amount of protein. It's less caloric than yogurt, but less nutritious ?, adds the nutritionist.

2. Fermented Milk

According to Ina Carolina, it is the food obtained by fermenting milk with the addition of yeast. "In addition to being rich in protein and calcium, it is considered a functional food since its lactobacilli, the" good bacteria ", serve to improve various functions of the intestines," he says.

3. Yogurt

Ina points out that yogurt is fermented milk, produced from the addition of lactobacilli (Streptococuccus thermophilus and Lactobacillus Bulgaricus, specifically), types of beneficial bacteria that turn milk sugar (lactose) into lactic acid through fermentation.

"It has a nutritional composition similar to milk: it is rich in proteins of high biological value, calcium and vitamins A and B complex, provides energy and has a balanced lipid composition," adds the nutritionist.

Milk Drink x Fermented Milk x Yogurt

Fermented milk is considered a functional food (which adds some more value to health than just nurturing), as its lactobacilli bring benefits to bowel function.

Yogurt cannot be considered a functional food. The amount of lactobacilli present in it is not as significant as in the case of fermented milk.

Dairy drinks, in turn, while having a significant amount of protein, cannot be considered functional, but are even less nutritious than yogurt (although less calorie).

Different types of yogurts

You may have noticed that there are different types of yogurts. Ina talks about the differences between them:

    Whole Yogurt: There is no change in the amount of original milk fat as well as in nutrients.

    Light Yogurt: has reduced energy or nutrient value compared to food compared.

    Low-fat yogurt: has less fat in its composition.

The nutritionist points out that the best option for consumption will be one that is appropriate to the nutritional status and energy expenditure of each person. "For example, fat-reduced yogurt has low calorie value, being indicated for those who want to lose weight and / or control the cholesterol index," he says.

4 Golden Tips for Buying Your Favorite Drink

Ina talks about the care when buying dairy drinks, yogurts or fermented milk:

  1. These products are perishable, especially due to their expiration date.
  2. Also pay attention to storage conditions.
  3. Products must always be refrigerated.
  4. If any of these characteristics are not appropriate, do not risk consuming.

Make your own yogurt

Did you know it is possible to make a healthy homemade yogurt? Nutritionist Ina teaches how to:

  1. Use 1 liter of whole milk (any type: sachet, long life, pasteurized);
  2. Use a glass container and place the milk in it at room temperature;
  3. Microwave for 1 minute, mix thoroughly;
  4. Flip 1 cup of plain natural yogurt (preferably with the expiration date closest to manufacture, as we will have more live fermenters);
  5. Mix;
  6. Leave outside the fridge for 8h to 12h covered with clean perforated cloth in a cool place. (Do not cover with plastic wrap or lid as it must have oxygenation).
  7. When it is the desired consistency you can cover and store in the refrigerator.

The yield is higher and the cost is much cheaper, as Ina points out. "It can be added to fruits, honey, jellies or cereals," he adds.

Now you know the main differences between drinks, you can consciously choose which type you want to drink, and also have the guidelines for making a yogurt at home.
